10 Healthy & Festive Holiday Drinks

Get in the spirit with these healthy takes on some holiday favorites plus some recipes for when you want something a little different.

    1. Skinny Eggnog

       

      Ingredients:

      • 2 cups skim milk
      • 1 teaspoon vanilla extract
      • 2 large eggs
      • 1/3 cup sugar
      • 1 teaspoon cornstarch
      • Freshly grated cinnamon, for garnish

      Directions: 

      1. Heat 1 ½ cups milk and vanilla in a saucepan.
      2. Meanwhile, whisk eggs, sugar, and cornstarch in a large bowl until combined.
      3. Gradually add the hot milk mixture to the egg mixture, whisking constantly.
      4. Place back into saucepan over medium heat and stir constantly until eggnog thickens, about 5 to 6 minutes.
      5. Remove from heat and immediately add remaining ½ cup of milk.
      6. Pour into pitcher and chill until ready to serve.
      7. Garnish with cinnamon. 

       Makes 6 servings.

       

       

        2. Eggnog (Dairy Free!) with Cinnamon Spiced Topping

            

          Ingredients:                                   

          • 2 cans of coconut milk, 14 ounces each
          • 6 egg yolks (save 2 egg whites for the meringue topping)
          • 2-4 tablespoons pure honey or sweetener of choice (amount depends on your desired sweetness level)
          • 1 tablespoon pure vanilla extract
          • 1 teaspoon nutmeg
          • ¼ teaspoon cinnamon

           

          Optional Cinnamon Spiced Meringue Topping Ingredients:

          • 2 egg whites
          • 1 teaspoon pure maple syrup, honey, or sweetener of choice
          • ¼ teaspoon cinnamon
          • ⅛ teaspoon nutmeg

           

          Additional optional toppings: toasted unsweetened coconut, additional nutmeg, cinnamon or cinnamon sticks

          Eggnog Instructions:

          1. Whisk together the egg yolks, honey, vanilla, nutmeg and cinnamon in a medium bowl until smooth. Set aside.
          2. Over medium high heat, bring the coconut milk to a simmer, stirring often.
          3. Pour half of the heated coconut milk into the bowl with the egg mixture and whisk together until well blended and pour it back into the pot with the rest of the coconut milk.
          4. Turn down the heat to medium low and stir constantly until the mixture is very thick – about 3 minutes. Remove from heat.
          5. Refrigerate at least 3 hours or overnight for best results (something magical happens overnight - the eggnog fairies must come because the flavors blend and it gets amazingly thick and creamy).

           

          Meringue Instructions:

          1. Whisk together the egg yolks, honey, vanilla, nutmeg and cinnamon in a medium bowl until smooth.
          2. Set aside.
          3. Over medium high heat, bring the coconut milk to a simmer, stirring often.
          4. Pour half of the heated coconut milk into the bowl with the egg mixture and whisk together until well blended and pour it back into the pot with the rest of the coconut milk.
          5. Turn down the heat to medium low and stir constantly until the mixture is very thick – about 3 minutes.
          6. Remove from heat.
          7. Refrigerate at least 3 hours or overnight for best results.
          8. Blend the egg whites until soft peaks form.
          9. Add in maple syrup or honey or sweetener of choice, cinnamon and nutmeg. Continue blending until very stiff peaks form.
          10. Add a dollop on top of the chilled eggnog.
          11. Top with optional toppings if you wish and serve chilled. Enjoy!

           

           

            3. Skinny Eggnog Latte

               

              Ingredients:

              • ½ cup lite eggnog
              • ¼ cup non-fat milk
              • ½ tsp. stevia or 1 tbsp sugar (to taste)
              • ¼ cup brewed espresso or very strong coffee
              • Sprinkle nutmeg

               

              Instructions:

              1. Brew coffee/espresso and place in mug
              2. In a small pan, add eggnog, milk and sugar. Whisk together until heated and frothy, about 2 - 3 minutes. Pour into mug with coffee.
              3. Garnish with nutmeg and or whip cream

               

               

                4. Gingerbread Latte

                   

                  Ingredients:

                  • 1/4 tsp cinnamon
                  • 1/8 tsp ground ginger
                  • 2 tsp molasses - blackstrap or regular
                  • 1 tsp pure vanilla extract
                  • 3 tbsp strong coffee
                  • 1 cup milk of choice - almondmilk, coconutmilk, etc.
                  • sweetener of choice, to taste

                   

                  Instructions:

                  1. Mix everything together in a small pot or in a mug.
                  2. Then heat until desired temperature is reached.
                  3. (Alternatively, if you want a foamy latte: Mix spices into coffee. In a big measuring cup, heat or microwave the milk until foamy. Then pour the milk into the coffee mixture.)

                   

                   

                    5. Peppermint Mocha

                       

                      Ingredients:

                      • 1/4 cup lowfat milk 1/4 cup coffee 1 tablespoon dark chocolate syrup 1 drop peppermint extract

                       

                      Instructions:

                      1. Brew some coffee and heat milk in microwave until hot.
                      2. Mix chocolate syrup and peppermint extract into coffee.
                      3. Foam milk with milk frother or just pour hot milk into cup.

                       

                       

                        6. Peppermint Hot Cocoa

                           

                          Ingredients:

                          • 1 cup milk (I used almond milk, any kind of milk will do the job)
                          • 1 1/2 tablespoon unsweetened cocoa powder
                          • 1 1/2 tablespoon agave nectar
                          • 1 drop peppermint extract

                           

                          Instructions:

                          1. In a small bowl, combine the cocoa powder and agave nectar and stir until they are combined.  
                          2. Set aside.  
                          3. Put the milk in a small sauce pan over medium low heat.  
                          4. Stir in the chocolate mixture and heat until steaming.  
                          5. Add the drop of peppermint extract.  

                          Makes 1 cup.

                           

                           

                          7. Spiced Cocoa

                           

                          Ingredients:

                          • 1/3 cup water
                          • 1/3 cup fresh or canned coconut milk (full fat), shake well if using canned.
                          • 1 1/4oz 85% dark chocolate (if you don’t have dark chocolate you can use 2 Tbsp unsweetened cocoa powder, you might have to add a little more honey)
                          • 2 tsp raw honey
                          • 1/8 tsp unrefined sea salt
                          • dash of cayenne pepper (this really compliments the cocoa)

                           

                          Instructions:

                          1. In a small saucepan over low heat, pour in coconut milk and dark chocolate.
                          2. Whisk together until smooth.
                          3. Add water, honey and salt and stir until well heated (but not boiled).
                          4. Sprinkle with a dash of cayenne pepper and serve hot.

                          Makes 1 cup.

                           

                           

                            8. Cinnamon and Mint Green Tea

                               

                              Ingredients:

                              • 1 small bunch mint, about 15 sprigs, preferably spearmint
                              • 4 3-inch cinnamon sticks (optional)
                              • 1-2 thin slices fresh ginger (optional)
                              • 6 cups cold water
4 bags green tea, regular or decaffeinated
                              • 6 Tbsp. frozen apple juice concentrate, or to taste

                               

                              Instructions:

                              1. Place mint, cinnamon sticks and ginger, if using, in large saucepan.
                              2. Add water, cover pot and bring to boil.
                              3. Reduce heat and simmer 3 minutes.
                              4. Remove from heat.
                              5. Add tea bags and steep 5 minutes.
                              6. Remove tea bags, mint, ginger and cinnamon sticks, reserving sticks.
                              7. Sweeten hot tea to taste with apple juice concentrate.  
                              8. Pour into mugs, add cinnamon sticks for garnish and serve.

                              Makes 6 servings.

                               

                               

                                9. Hot Chocolate Chai

                                   

                                  Ingredients:

                                  • 4 cardamom pods, cracked
                                  • 1 (4-inch) piece cinnamon stick
                                  • 4 whole cloves
                                  • 1/4 tsp. anise seed
                                  • 2 - 4 (1/4-inch) slices fresh ginger, peeled (see note*)
                                  • 2 cups water
                                  • 2 black tea bags
                                  • 2 Tbsp. unsweetened natural cocoa powder
                                  • 1/4 tsp. vanilla extract
                                  • 2 cups unsweetened almond or soymilk
                                  • 3 Tbsp. agave syrup, honey or stevia, or to taste

                                   

                                  Instructions:

                                  1. Place cardamom, cinnamon, cloves, anise seed and ginger in medium saucepan.
                                  2. Add 2 cups water, and place over medium-high heat.
                                  3. When water simmers, cover, and simmer over medium-low heat for 3 minutes.
                                  4. Remove from heat.
                                  5. Add tea bags, cover, and steep for 4 minutes.
                                  6. Remove tea bags, cover, and steep brewed tea with spices for 20 minutes.
                                  7. Strain to remove spices, and return spiced tea to saucepan.
                                  8. In small bowl, whisk cocoa with 1/4 cup of hot tea until dissolved, then add to tea.
                                  9. Mix in vanilla, and almond or soymilk.
                                  10. Heat chai over medium-high heat until steaming.
                                  11. Sweeten to taste then pour into mugs, or divide chai among 4 mugs and sweeten it to taste individually.

                                  Makes 4 servings.

                                                         

                                   

                                    10. Ginger and Turmeric Hot Cider

                                       

                                      Ingredients:

                                      • 1 cup fresh sweet apple cider
                                      • 1 tsp. grated fresh ginger
                                      • 1 tsp. grated fresh turmeric
                                      • 1½-inch by 1/2-inch strip lemon peel, white part included

                                       

                                      Instructions:

                                      1. In small saucepan, combine cider, ginger, turmeric and lemon peel. Over medium-high heat, heat until ring of bubbles appears around edge of pan, 3 minutes.
                                      2. Cover pan and set aside to steep for 5 minutes.
                                      3. Pour hot-spiced cider through fine tea strainer into mug.
                                      4. Serve immediately.

                                      Makes 1 serving.
